Sambal Pencok Puteh

Another sambal recipe that becomes my family’s favorite dish, Sambal Pencok Puteh. Unlike usual sambal that has red color, this sambal is white (puteh=putih=white). To add another differences, it is more liquify and poured onto mashed-steamed stuffs, like egg, eggplant, tempe, or tofu. Yes, steamed, not fried. Interesting, isn’t it ? ^^ And it is a finger-licking good and rice-consuming for sure. So, be prepared 😉

Ingredients:
chili-small 6-8 Chili Paddie galangal-kaempferia 1.5 cm Kaempferia Galangal (Sand Ginger)
galangal 1 cm Greater Galangal candlenut-kemiri 3 Candlenut
Lime Leave-Kaffir 1 Kaffir Lime Leave coconut-milk 100 ml Coconut Milk
sugar  1 tbs Sugar salt n pepper 1.5 tsp Salt
Steps:
  1. First, steam or fry the candlenut. Raw candlenut will give you bitter taste and unpleasent smell.
  2. Roughly chop all ingredients except seasoning and coconut milk. Put them on the blender glass
  3. Add salt and sugar.
  4. Blend well
  5. Pour coconut milk. The sambal supposes to have consistency of milk. So, if it is still too thick, you can lighten it down by adding water.

You can serve this with steamed eggplant, egg, tofu, or tempe. Put them on a large plate. Pour the sambal then mashed them a bit to let the sambal easier to be absorbed. Serve with warm rice.. Yummy !! ^^

Sambal Pencok Puteh

Resep sambal lain yang jadi favorit keluargaku, Sambal Pencok Puteh. Tidak seperti sambal pada umumnya, sambal ini berwarna putih. Perbedaan lainnya, sambal ini cair dan dituang ke atas penyetan kukus. Iya, dikukus bukan digoreng. Menarik, kan ? ^^ Dan tingkat kelezatannya sampai bikin jilatin jari dan habis-habisin nasi. Jadi, siap-siap aja deh (timbangan naik) 😉

Bahan:
chili-small 6-8 Cabe Kecil galangal-kaempferia 1.5 cm Kencur
galangal 1 cm Laos candlenut-kemiri 3 Kemiri
Lime Leave-Kaffir 1 Daun Jeruk Purut coconut-milk 100 ml Santan
sugar  1 sdm Gula salt n pepper 1.5 sdt Garam
Langkah:
  1. Pertama, goreng atau kukus kemiri. Kemiri mentah rasanya pahit dan baunya tidah enak.
  2. Potong kasar semua bahan kecuali santan, gula, dan gara,. Masukkan dalam gelas blender.
  3. Tambahkan gula dan garam.
  4. Blender (atau ulek) hingga halus.
  5. Tuangkan santan. Sambal ini harusnya secair susu. Jadi jika masih terlalu kental, bisa diencerkan dengan air.

Kamu bisa sajikan dengan terong, telor, tempe, atau tahu kukus. Taruh di piring atau cobek besar. Tuangkan sambal lalu penyet hingga sambal merasuk ke bahan. Santap dengan nasi hangat.. Yummy!! ^^
