Homemade Martabak (Arabic Stuffed Pancake)

Martabak is one of Arabic’s (or maybe Indian’s) dish that is very famous here. We have it as street food. The original martabak (one that is sold) is made with special thin and very elastic layer. They make it by  turning and throwing the dough at the same time, like this man doing from 0:25

Well, this site won’t be named Cooking4Dummy if i’m doing that, right ? 😀 Instead, i use spring roll wrappers to substitute. Not dumpling wrappers though, cause they are a bit thicker. And for the seasoning, i use Gulai (red curry) instant seasoning. So, it is as easy as you can imagine 😉

Let’s do it!

Ingredients:
wrapper-springroll 9 sheets Springroll Wrapper (18×18 cm) meat-ground 200 gr Grounded Meat
egg 6 Eggs seasoning-gulai 1 sachet Gulai (Red Curry) Seasoning
onion 1 Onion leek 3 Leek
salt n pepper Salt &  Pepper oil-veggie  Cooking Oil
Steps:
  1. In cool temperature, peel 9 sheets of spring roll wrappers from their pile. Lay one by one on a flat (metal/stainless steel) surface with layer of flour in between to keep them not sticking together. Please keep the rest of wrappers in good air tight pack and in refrigerator.
  2. Saute Gulai seasoning. Add grounded meat. Stir until the meat is cooked and seasoning is well absorbed. Add salt & pepper to taste
  3. Thinly chop leek and onion.
  4. Break and whisk eggs. Put in chopped leek and onion. Whisk. Put in grounded meat. Whisk. Add 2 pinches of salt.
  5. Heat a non-stick pan that has at least 18 cm wide of bottom. Add in cooking oil, enough to cover bottom of pan around 5 mm high. Set heat on medium.
  6. Take 1 wrapper onto the cooking oil.
  7. Put 5 spoonfuls of egg mixture to cover wrapper’s surface right until the very edge. Make sure you have enough egg liquid there.
  8. Put another wrapper on top of the egg mixture. Gently press it to make it stick, especially on sides and edges so stuffs inside won’t come out.
  9. Wait until the bottom wrapper becomes golden brown and hard.
  10. Carefully, flip it (so the bottom wrapper now on top).
  11. Do step 7 to 10 a couple of times. There you have 1 martabak. Take it out from pan and drain the oil down with a flat strainer/rack. Please don’t use paper towel cause it will stick.
  12. Repeat step 6 to 11 to make another 2 pancakes. Note: you may need to add more cooking oil.
  13. Done ^^

Martabak adalah masakan Arab (atau mungkin India) yg sangat beken di sini. Biasanya martabak dijual di pinggir-pinggil jalan. Martabak yg sebenarnya dibuat dengan kuliat khusus yang tipis dan elastis. Mereka membuatnya dengan cara memutar dan melempar adonan pada saat bersamaan.

Tentu saja situs ini tidak akan dinamai Cooking 4 Dummy (memasak bagi pemula) jika aku melakukannya, kan ? 😀 Jadi, aku pakai kulit lumpia sebagai pengganti kulitnya. Bukan kulit pangsit sih, karena kulit pangsit sedikit lebih tebal sehingga teksturnya saat digoreng pun akan berbeda. Selain itu, aku menggunakan bumbu gulai jadi. Jadi memang resep ini semudah yang anda bayangkan 😉

Yuk, buat!

Bahan:
wrapper-springroll 9 lembar kulit lumpia (18×18 cm) meat-ground 200 gr Daging Giling
egg 6 Telur seasoning-gulai 1 bungkus Bumbu Gulai Jadi
onion 1 Bawang Bombay leek 3 Bawang Prei
salt n pepper Garam & Merica oil-veggie Minyak Goreng
Cara:
  1. Lepaskan 9 lembar kulit lumpia dingin (bukan beku) dari tumpukannya. Letakkan satu per satu di atas permukaan datar (besi/stainless steel, jika mungkin) dengan menaburkan tepung di antara lembaran agar tidak lengket. Simpan kembali sisa kulit. Pastikan tidak terkena udara dan di tempat dingin.
  2. Tumis bumbu gulai hingga harum. Tambahkan daging giling. Aduk2 hingga daging masak dan menyerap semua bumbu. Tambahkan garam dan merica sesuai selera.
  3. Rajang bawang prei dan bombay.
  4. Pecah dan aduk telur. Masukkan rajangan bawang. Aduk. Masukkan tumisan daging. Aduk. Tambahkan2 jumput garam.
  5. Panaskan wajan anti lengket yang lebar dasarnya paling tidak 18 cm. Tuang minyak goreng hingga menutupi dasar wajan hingga setinggi 5 mm. Panaskan dengan api sedang.
  6. Ambil 1 lembar kulit dan masukkan ke wajan.
  7. Letakkan 5 sendok makan adonan telur merata di seluruh permukaan kulit, hingga tepi2nya.
  8. Letakkan selembar kulit di atasnya. Tekan2 agar lengket, khususnya di bagian sisi2 sehingga isi martabak tidak akan keluar.
  9. Tunggu hingga kulit yg bawah (yg menyentuh minyak) menjadi keras dan berwarna kuning kecoklatan.
  10. Dengan hati2, balik martabak (kulit bawah kini di atas).
  11. Lakukan langkah 7 sd. 10 sebanyak dua kali. Kini telah jadi 1 martabak. Keluarkan dari wajan dan keringkan dari minyak dengan saringan atau rak. Sebaiknya tidak menggunak tissue karena akan lengket.
  12. Ulangi langkah 6 sd. 11 untuk membuat 2 martabak. Catatan: Kamu mungkin perlu menambahkan minyak goreng ke dalam wajan.
  13. Selesai ^^
