Ox-Tongue Steak (Indonesian/Mom Style)

Here in Indonesia, it is hard (expensive) to have a steak quality beef. So, unlike western-like steak which the beef only being grilled (after being marinated, sometimes), we need to process our beef more to have it tender enough to be a steak. Hammering with meat tenderizer might not be enough. Some need to rub the meat with pineapple juice first. Well, mom like to boil it in pressure cooker.

Actually, i don’t know whether this recipe is really Indonesian style or just my mom’s recipe :P. Instead of marinate the meat, mom prefers to slow cook it with the gravy. After that, you may grilled it. But mom’s never done that. It’s already delicious the way it is.

For last Christmas lunch party we decided to have this Ox-Tongue Steak, of course Mom’s style. So here’s the recipe (i try to be punctual because mom does it in approximation way >.< )

Ingredients:
tounge 1 whole Salted Ox Tongue (3/4 – 1 kg) ketchup 6 tbs Tomato Ketchup
meat-ground 200 gr Ground Meat water 750 ml Water
milk-condesed  6 tbs Condensed Milk garlic  6 cloves Garlic
shallots a handful of Shallot onion 1 Onion (big)
thyme 2 pinches (dried) Thyme oregano  2 pinches (dried) Oregano
nutmeg 2 pinches Grounded Nutmeg salt n pepper Salt & Pepper
oil-veggie 4-5 tbs Cooking Oil (for saute)

Note: If you don’t like ox-tongue, you can substitute it with beef.

Steps:
  1. In a pressure cooker, boil ox-tongue around 15-30 mins until it is tender.
  2. While the ox-tongue is cooked, we can prepare the gravy. First, thinly chop garlic and shallot. Then chop onion.
  3. Saute garlic until slightly brown. Add in shallot and onion. Saute them until tender.
  4. Add in the ground meat and pour in the water. You can change this ground meat and water combination with beef stock.
  5. Add ketchup and condensed milk.
  6. Season with nutmeg, salt, and pepper. Don’t forget to taste 🙂
  7. Shimmer in low heat.
  8. Make sure ox tongue is tender by punch fork in. If it tender enough, let it cool for a while, then peel its skin by hand. It is quite easy to do.
  9. Slice ox tongue into 0.75 cm thick.
  10. Cook them with in the gravy in a low heat, until the water is drained.
  11. Sprinkle thyme and oregano, then serve.

Ox-tounge Steak

Di Indonesia, daging berkualitas steak susah dicari (yg murah, alias mahaaaal boo’). Jadi, tidak seperti resep2 steak ala barat yang cuma perlu membakar (beberapa dibumbui terlebih dahulu), kita perlu memproses daging itu agar cukup empuk untuk dibuat steak. Dipukuli pakai palu pengempuk kadang tidak cukup. Beberapa melaburi daging dengan jus nanas. Well, mama lebih suka merebusnya dalam panci presto.

Sebenarnya, aku tidak yakin apakah ini steak ala Indonesia atau cuma ala mama 😛 Jadi, bukannya membumbui dagingnya, mama lebih suka memasak daging bersama saosnya. Setelah itu, anda bisa membakarnya. Tapi mama tidak pernah melakukannya. Begitu saja sudah enaaaak.

Untuk makan siang Natal lalu kami memutuskan membuat Steak Lidah, tentu saja ala mama. Jadi, ini dia resepnya (aku berusaha setepat mungkin karena mama pakai ilmu kira-kira >.< )

Bahan:
tounge 1 Lidah Asin utuh(3/4 – 1 kg) ketchup 6 sdm Saos Tomat
meat-ground 200 gr Daging Giling water 750 ml Air
milk-condesed  6 sdm Susu Kental manis garlic  6 siung Bawang Putih
shallots segenggam Bawang Merah onion 1 Bawang Bombay besar
thyme 2 jumput Thyme kering oregano  2 jumput Oregano kering
nutmeg 2 jumput Pala bubuk salt n pepper Garam & Merica
oil-veggie 4-5 sdm Minyak Goreng

Note: Jika tidak suka lidah, bisa diganti dengan daging (khas dalam)

Langkah:
  1. Masak lidah dalam panci presto sekitar 15-30 menit sampai empuk.
  2. Semetara lidah dimasak, kita bisa menyiapkan saosnya. Pertama, rajang halus bawang putih dan merah. Rajang pula bawang bombay.
  3. Tumis bawang putih hingga kekuningan. Tambahkan bawang merah dan bombay. Tumis hingga lembek.
  4. Masukkan daging giling dan air. Anda dapat mengganti kombinasi ini dengan kaldu daging.
  5. Tambahkan saos tomat dan susu kental manis.
  6. Bumbui dengan pala, garam, dan merica. Jangan lupa untuk mengicipi 🙂
  7. Masak dengan api kecil.
  8. Pastikan lidah telah empuk dengan menusuknya menggunakan garpu. Jika telah empuk, dinginkan sebentar, lalu kuliti dengan tangan. Cukup mudah kok.
  9. Potong lidah dengan ketebalan 3/4 cm.
  10. Masukkan ke dalam saos dan masak dengan api kecil hingga air habis dan saos kental.
  11. Taburi thyme dan oregano, lalu sajikan.

SIlakan dicoba dan beri tahu aku cocok atau tidak dengan resep ini ^^
