(Unripped) Mango Sorbet

The weather is getting warm (read: hot) here. All i wanna do is to eat ice cream or something cold all the time. And that’s B.A.D for me. High glucose and calorie alert!! So i was thinking to make home made ice cream. That way i can control how sweet and “fatty” my ice cream will be. Then, i changed my mind, and decided to make Sorbet. You know, the no-cream ice cream 😛  A family brought us Manalagi mangoes. Manalagi mango is very sweet and less sour. We are not too in to it and that’s why they are still in refrigerator after few weeks 😀

(Cuaca udah mulai panas. Aku jadi pengen makan es krim dan yang dingin2 terus2-an. Bahaya banget dah, secara gula dan kalori tinggi. Jadi, aku mikir buat bikin es krim sendiri, jadi bisa atur gula dan lemaknya. Terus, mikir2.. mendingan bikin Sorbet. Itu lho, es krim yang tidak pakai krim 😛 Kebetulan dapat mangga Manalagi dari kerabat. Manalagai rasanya sangat manis, hampir tidak ada kecutnya. Keluargaku tidak terlalu suka, makanya setelah beberapa minggu masih nongkrong manis di kulkas :D)

Since i don’t have any ice cream maker, i browsed the net to find way to make ice cream without it. Turns out, it is simpler than i thought. Only need a blender, strainer, and a looot of patient LOL.

(Karena aku tidak punya alat pemuat es krim, aku cari2 di internet cara yang tanpa alat itu. Ternyata lebih gampang dari perkiraanku. Hanya butuh blender, saringan, dan banyak kesabaran LOL)

On one Sunday afternoon, i made up my mind to make this mango sorbet. All ingredients and equipments are ready. So i started to stripped down a mango, and it was … still young (hopefully not innocent), white flesh, and unripped. Well, it is good for the ice cream taste, because the mangoes still had sourness. But, i was worry but the color. And i had to do few extra works to have a smooth sorbet. Oh, well.. i did it anyway and it paid the price 😉

(Di suatu minggu sore, aku bertekad buat bikin sorbet mangga ini. Semua bahan dan alat sudah ada. Jadi aku mulai kupas mangga, dan ternyata.. masih muda belia, daging putih, dan belum matang. Well, di satu sisi rasa asam dari si Manalagi muda ini akan bikin sorbet jadi enak. Tapi warnanya yang bikin cemas. Putih gitu. Apalagi, berarti aku harus kerja ekstra agar si sorbet jadi tetap mulus lembut. Oh, well.. akhirnya tetap aku lakukan dan hasilnya sesuai dengan kerja kerasku 😉 )

Ingredients:
mango 2 (young) (Manalagi) Mangoes  lemon 1 Lemon
 sugar 1/4 cup Sugar (to taste)  water 1/4 cup water (same ratio with sugar)

Note: The amount of lemon and sugar are really vary, depends on taste of mangoes and your preference.

Steps:
  1. Put a container for keeping the sorbet in freezer.
  2. Cut mangoes into smaller pieces.
  3. Bring water and sugar to shimmer (sugar is totally dissolve to the water). This is called simple syrup.
  4. -This step is unnecessary if you have ripe mangoes- Low down heat (to the lowest) and cook young mangoes until a bit soften (don’t forget to cover with lid).
  5. Put mangoes, simple syrup to blender. Add in lemon juice. Blend them until really smooth.
  6. Because mango has quite strong fiber, the puree needs to be strained. Depends on strainer size, put 1-2 tablespoon of the mango puree on strainer on top of a bowl. Strain it with back of spoon. Strain it hard!! You will have a super smooth mango puree.
  7. Take out container from freezer. Pour the puree in.
  8. Put it back to freezer for about 60 minutes.
  9. Take container out. With a fork, try to whisk the pure. Break all the ice crystals created.
  10. Repeat no 8-9 for 6-8 times.
  11. Let it freeze completely.
  12. To serve it, we have to let it in room temperature for about 5 minutes, so it can be soften a bit. Scoop it. And enjoy ^^

I found that it is a perfect taste for me. But my mom said it is too sour. So i serve it with strawberry puree (I just mix 5-6 strawberries with 1/2 tbs sugar (and water),throw it in microwave for a minute, then smack them with spoon).

Resep Bahasa Indonesia

Bahan:
mango 2 Mangga (Muda) (Manalagi)  lemon 1 Lemon (sesuai selera)
 sugar 1/4 cup Gula (sesuai selera)  water 1/4 cup Air (rasio sama dengan gula)

Note: Jumlah gula dan air lemon bergantung rasa asli si mangga dan selera anda

Steps:
  1. Masukkan tempat yg akan dipakai menyimpan sorbet ke freezer.
  2. Potong2 mangga menjadi kecil.
  3. Larutkan gula dan air dengan cara memanaskannya. Ini disebut simple syrup
  4. – Langkah ini tidak perlu jika mangga anda sudah matang- Kecilkan api hingga paling kecil, masang mangga muda hingga menjadi lunak (jangan lupa menutup pancinya).
  5. Masukkan mangga dan simple syrup ke mangkok blender. Tambahkan air lemon. Blender hingga benar-benar halus.
  6. Karena mangga punya banyak serat kasar, bubur mangga ini perlu disaring. Bergantung besar saringan, masukkan beberapa sendok makan bubur mangga pada saringan di atas mangkok. Saring dengan menekan-nekan punggung sendok. Saring yang kuat, ya ^^ Anda akan mendapatkan bubur mangga yg super halus.
  7. Keluarkan wadah dari freezer. Masukkan bubur.
  8. Taruh kembali ke freezer selama 60 menit.
  9. Keluarkan dari freezer. Aduk bubur (yg sudah mulai beku) dengan garpu. Pecahkan semua kristal es yang tampak.
  10. Ulangi langkah 8-9 hingga 6-8 kali.
  11. Biarkan beku sempurna.
  12. Untuk menyajikan, keluarkan dulu pada suhu ruangan selama 5 menit hingga jadi lebih lunak. Sendok, dan sajikan ^^

Menurutku rasanya sudah pas. Tapi kata mama terlalu kecut (hehehe). Jadi aku sajikan dengan bubur strawberry (campur 5-6 strawberry dengan 1/2 sdm gula (dan air), microwave selama 1 menit, lalu hancurkan dengan sendok). Sengaja tidak pakai air lemon lagi, biar tidak kecut. Yummy! ^^
