Chinese Fried Noodles with Spinach

Fried Noodles is a very famous Chinese food, so famous, that it becomes comfort food for most of (Asian) people. The thing about comfort food is, everyone has their own preferred taste, add a bit of this and that, until the original recipe is blur nor everyone claims theirs as original one lol. So, i won’t (of course) claim this recipe is the original, it is just the way my family like it. Anyway, we usually use chinese mustard, but because i have some spinach, lef-over from my (unfinished) diet (hiks), so i use the spinach instead. And ths time i also use curly egg noodles, this one is thinner than the previous hokkien noodles, and has curly shape.

Ingredients:
noodles-curly 1 pack of Curly Egg Noodles shrimp  3 Shrimps, chop into small pieces
chicken breast  50-100 gr Chicken (breast), chop into dices spinach 1 bunch of spinach leaves
garlic  2 cloves of Garlic water  500 ml Water (for boiling noodles) + 1/2 cup for cook
oil-veggie  1 tbs (for noodles) + 3 tbs (for saute)  Cooking Oil soy sauce  2 tbs Soy Sauce
sweet soy sauce  4 tbs Sweet Soy Sauce oil-sesame  2 tbs Sesame Oil
salt n pepper  Salt & Pepper  egg  1 Egg
Steps:
  1. Bring to boil 500 ml water. Put the noodle inside, and let it cook. Once the noodles is cooked, take it out the water, sprinkle with 1 tbs cooking oil, and set aside,
  2. Make scrambled egg, put aside.
  3. In high heat, put 2 tbs of cooking oil. Quick saute garlic. Bring down shrimps and chicken until they are cooked. Then, add the spinach.
  4. To avoid burning, add 1/2 cup of water, and let it soften the spinach a bit.
  5. Put the noodles in. Combine.
  6. When the water is evaporated, add 1 tbs cooking oil. Stir until the new coking oil is sizzling. Put the scrambled egg
  7. Add sweet soy sauce onto the side of the cook (not directly to the noodles), so it is cooked. Stir well.
  8. Season with soy sauce, salt and pepper. Taste it. It should taste sweet and savory. If you like it sweet, you can add more sweet soy sauce, or sugar (if you don’t like to have black noodles). Stir until all seasoning is well-combine with the noodles
  9. Add sesame oil. Combine. And serve ^^

Bahan-Bahan:
noodles-curly 1 pak Mi Keriting shrimp  3 Udang, potong kecil2
chicken breast  50-100 gr Ayam, potong dadu spinach 1 ikat bayam, ambil daunnya
garlic  2 siung Bawang Putih water  500 ml (u/ masak mi) + 1/2 cangkir Air
oil-veggie  1 sdm (u/ masak mi) + 3 sdm (u/ tumis) Minyak Goreng soy sauce  2 sdm Kecap Asin
sweet soy sauce  4 sdm Kecap manis oil-sesame  2 sdm Minyak Wijen
salt n pepper Merica & Garam
Cara:
  1. Didihkan air. Masukkan bakmi dan tungu hingga masak. Setelah matang, tiriskan dan beri 1 sdm minyak, aduk dan sishkan.
  2. Masak telur menjadi orak arik. Sisihkan.
  3. Dalam api besar, maukkan 2 sdm minyak goreng. Tumis bawang putih hingga harum. Masukkan udang dan ayam hingga matang. Tambahkan bayam
  4. Agar tidak gosong, tambahkan 1/2 cangkir air. Biarkan hingga bayam sedikit layu.
  5. Masukkan mi. Aduk.
  6. Ketika air sudah menguap, tambahkan 1 sdm minyak goreng. Aduk hingga minyak kembali berdesis. Masukkan orak arik telur.
  7. Masukkan kecap manis dari tepi wajan (tidak langsung ke bakmi), sehingga kecap manis sempat bertemu dengan panas dan menjadi masak. Campur hingga rata.
  8. Bumbui dengan kecap asin, garam dan merica. Cicipi. Rasanya adalah manis gurih. Jika ingin lebih manis dapat ditambah kecap manis atau gula (jika tidak suka mi berwarna colat hitam). Aduk hingga semua bumbu rata pada setiap bagian mi.
  9. Tambahkan minyak wijen. Aduk. Sajikan ^^
